Chocolate Peanut Butter Banana Bread
- 2 cups Whole Wheat Pastry Flour (or All-purpose)
- 1-1/4 Tablespoon Baking Powder
- 1/3 cups Cocoa Powder
- 1/4 cups Peanut Flour (this Can Be Omitted If You Don't Have Any)
- 1/4 teaspoons Cinnamon
- 1/4 Tablespoons Salt
- 1/2 cups Butter, At Room Temperature
- 1/2 cups Peanut Butter
- 1/3 cups Brown Sugar
- 1/4 cups White Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 4 whole Large Ripe Bananas, Mashed
- 1/2 cups Milk
- Raw Turbinado Sugar For Garnish
- Preheat oven to 350 degrees F. Combine flour, baking powder, cocoa, peanut flour, cinnamon and salt in a bowl and set aside.
- Cream butter and peanut butter in the bowl of an electric mixer. Add sugars and beat until fluffy, about 3 minutes. Add egg and vanilla, mixing until combined. Add bananas and mix. Add dry ingredients slowly into the creamed mixture, mixing until just combined. Stir in milk, adding additional amounts one tablespoon at a time if batter is not wet enough.
- Spray a loaf pan with non-stick spray and pour in the batter. Cover the top with coarse sugar for garnish. Bake for 50 minutes, or until knife inserted comes out clean.
