Brussels Sprouts Salad With Cranberry Orange Vinaigrette
- FOR THE DRESSING:
- 1/2 cups Fresh Squeezed Orange Juice
- 1/4 cups Apple Cider Vinegar
- 1 Tablespoon Canned Jellied Cranberry Sauce
- 1/2 teaspoons Dijon Mustard
- 1/4 teaspoons Black Pepper
- 1/4 teaspoons Salt
- 1/2 cups Olive Oil
- FOR THE SALAD:
- 2 cups Chopped Brussels Sprouts
- 1/4 cups Dried Cranberries
- 1/4 cups Cooked Quinoa
- 1/4 cups Toasted Pistachios
- 1 Tablespoon Chia Seeds
- For the dressing: In a blender combine orange juice through salt and blend until combined. Gradually add the olive oil and blend on low until creamy.
- For the salad: Into a serving bowl place chopped Brussels sprouts, cranberries, quinoa and pistachios and top with chia seeds. Pour on some dressing and toss. Enjoy!
