Brussels Sprouts Salad With Cranberry Orange Vinaigrette

  1. For the dressing: In a blender combine orange juice through salt and blend until combined. Gradually add the olive oil and blend on low until creamy.
  2. For the salad: Into a serving bowl place chopped Brussels sprouts, cranberries, quinoa and pistachios and top with chia seeds. Pour on some dressing and toss. Enjoy!
