Grandma Ruby’S Scalloped Corn
- 4 Eggs
- 2 teaspoons White Sugar
- 1 teaspoon Salt
- 1/2 teaspoons Black Pepper
- 1 cup Milk
- 2 cans (15 Oz. Size) Cream Style Corn
- 1/2 cups Diced Yellow Onion
- 4 cups Diced Stale White Bread Or Plain Bread Stuffing
- 2 cups Crispy Rice Cereal
- 8 Tablespoons Butter
- Slightly beat eggs, then mix in the sugar, salt, pepper and milk. Combine corn, egg mixture and onion and gently stir. Fold in bread. Add mixture to buttered baking dish, set aside.
- In separate bowl, mix cereal and melted butter. Spread an even layer over the corn, egg and bread mixture.
- Bake at 350u0b0F for 1 1/2 hours. Allow to rest 15 minutes before serving.
- Note: If only doing half a recipe, reduce the cook time to 45-60 minutes.
