Almond Joy Pancakes

  1. 1.)Mix Greek yogurt, egg, milk and almond extract into a small bowl. Set aside.
  2. 2.) In a separate bowl combine flour, baking soda, sugar, and cocoa powder.
  3. 3.) Combine the wet and dry ingredients and whisk till evenly mixed.
  4. 4.) Fold in coconut and chocolate chips.
  5. 5.) Over medium heat, place 1/4-cup of the batter onto a non-stick skillet sprayed with non-stick cooking spray) and cook till bubbles start appearing through the top of the pancake and then flip and cook the other side. About 1-2 minutes on each side.
  6. 6.) Top with maple syrup, a pinch of coconut and a few mini chocolate chips.
  7. Makes eight 4" pancakes.
