Almond Joy Pancakes
- 1/3 cups Greek Yogurt, Plain, Non-fat
- 2 whole Egg Whites
- 1/3 cups Coconut Milk - Lite
- 1/2 teaspoons Almond Extract
- 1/3 cups Whole Wheat Pastry Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Sugar
- 1 Tablespoon Unsweetened Cocoa Powder
- 1 Tablespoon Unsweetened Shredded Coconut
- 1 Tablespoon Mini Chocolate Chips
- Optional For Serving: Maple Syrup, A Pinch Of Coconut And A Few Mini Chocolate Chips
- 1.)Mix Greek yogurt, egg, milk and almond extract into a small bowl. Set aside.
- 2.) In a separate bowl combine flour, baking soda, sugar, and cocoa powder.
- 3.) Combine the wet and dry ingredients and whisk till evenly mixed.
- 4.) Fold in coconut and chocolate chips.
- 5.) Over medium heat, place 1/4-cup of the batter onto a non-stick skillet sprayed with non-stick cooking spray) and cook till bubbles start appearing through the top of the pancake and then flip and cook the other side. About 1-2 minutes on each side.
- 6.) Top with maple syrup, a pinch of coconut and a few mini chocolate chips.
- Makes eight 4" pancakes.
