Glazed Lemon Bread (Teacakes)
- 1-1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. butter, melted
- 1 c. sugar
- 2 eggs
- 1/4 tsp. almond extract
- 1/2 c. milk
- 2 tsp. lemon extract
- 1-1/2 Tbsp. lemon juice
- 2 Tbsp. sugar
- Combine flour, baking powder and salt in a mixing bowl. In another bowl, stir together melted butter, sugar, eggs, and almond extract. Add flour mixture and milk alternately to sugar mixture. Add lemon extract. Pour batter into 2 (5 3/4 x 3 x 2 1/8) small loaf pans or 1 loaf pan, greased and floured. Bake at 350u0b0 for 30 minutes (small loaf pans) or 55 - 60 minutes (large loaf pan) or until toothpick inserted near center comes out clean. Mix lemon juice and sugar well, immediately spoon over hot loaves/loaf. Cool for 10 minutes on a wire rack. Remove bread from pan; cool completely. Wrap and store overnight before slicing.
