Creamy Pea Soup
- 1 bag (16 Oz. Size) Frozen Baby Peas
- 2 cups Plain Greek Yogurt
- 1 cup Light Cream
- 1/2 cups 1% Or 2% Milk
- 1-1/4 teaspoon Black Pepper
- 1 teaspoon Onion Salt
- 1/2 teaspoons Cumin
- 1 cup Low Sodium Vegetable Broth
- 1/4 cups Real Bacon Bits (from A Jar Is Fine To Use)
- Seasoned Croutons To Garnish, Optional
- In a blender or food processor add frozen baby peas. Pulse several times then run blender/food processor for several minutes to puree. Add the Greek yogurt and run to combine. Transfer the puree into a Dutch oven (or any pot with a lid). Add cream, milk, black pepper, onion salt, cumin and vegetable broth and stir to combine. Cover and cook on medium heat for 20 minutes, stirring during cooking time.
- Serve in individual bowls and top with bacon bits and optional seasoned croutons. Enjoy!
