Peanut Butter And Rolo Cookies

  1. Preheat your oven to 375 degree F. Line a baking sheet with Silpat or parchment paper. Set aside.
  2. In a bowl combine the flour, salt and baking soda. Set aside.
  3. In your mixer, cream the peanut butter and butter. Add the brown sugar, milk and vanilla. Blend well, add the egg and blend some more. Carefully add the dry ingredients and beat until just blended.
  4. Using a medium size scoop, form your cookies and place a Rolo in the center of each one. Gently wrap the Rolo in the cookie dough and roll in the turbinado sugar (if using). You could also sprinkle the turbinado sugar on top of all the cookies before putting them in the oven.
  5. Cook in the preheated oven for 11-12 minutes. Let the cookies cool in the pan for 3-4 minutes before removing.
