Aunt Jane’S Quiche

  1. In a food processor, whiz crackers up until fine crumbs are formed (or place in a gallon Ziploc baggie and use a rolling pin to crush).
  2. In a medium saucepan, melt butter over medium heat. Remove from heat and stir in the cracker crumbs. Spread cracker crumbs in the bottom and up the sides of a pie dish to form the crust, pressing firmly.
  3. Starting with eggs, combine remaining ingredients in a large mixing bowl and pour into the crust. Use a spoon or spatula to evenly push around the cheese and other fillings. Bake for 30-40 minutes or until a fork inserted in the center of the quiche comes out clean without any eggs sticking to it.
  4. Other variations: switch up bacon for cooked crumbled sausage, or ham chunks.
  5. Try fresh chopped spinach or asparagus-delicious!
