Mango Cream Cheese Bars
- FOR THE CRUST:
- 1-1/2 cup All-purpose Flour
- 3/4 cups Butter
- 1/2 cups Confectioners Sugar
- 1/2 cups Shredded Coconut
- FOR THE MANGO FILLING:
- 16 ounces, weight Cream Cheese
- 2 whole Eggs
- 1/3 cups Lemon Juice
- 1 cup Milk
- 3/4 cups White Sugar
- 2 whole Mangos, Peeled And Cubed
- Blend all of the crust ingredients in a food processor and press into the bottom of a lightly greased 9x13" pan. If you do not have a processor, you can use a pastry blender to incorporate the butter into the flour.
- Bake at 350u0b0F for 18 minutes or until browned.
- Blend the filling ingredients until smooth. Pour over the baked crust and return to the 350u0b0F oven for 30 minutes or until the filling is set.
- Cool completely before serving.
