Caramel Apple Pie Crepes
- 1/2 cups All-purpose Flour
- 1/2 teaspoons Salt
- 3/4 cups Milk
- 1 whole Egg
- 1 Tablespoon Oil Plus Extra For Your Pan
- 1 Tablespoon Butter
- 1 whole Apple, Peeled And Diced
- 1/2 teaspoons Cinnamon
- 2 Tablespoons Brown Sugar
- 5 Tablespoons Caramel Sauce
- In a small bowl whisk flour and salt. Add in milk, egg and oil and mix until smooth. Let mixture rest for 10-20 minutes.
- Lightly oil a small non-stick skillet and heat on medium-low.
- Pour in 3 Tablespoons of the batter and swirl around the pan until you get a very thin layer of batter across the bottom surface of the pan.
- Cook for about 2 minutes or until crisp around the edges and golden brown.
- Flip and cook the remaining side until golden brown. Remove the crepe to a plate. Keep cooked crepes under a lightly damp paper towel.
- Repeat with remaining batter.
- Once crepes are done heat 1 Tablespoon of butter in the same pan over medium heat. Add in diced apples, cinnamon and sugar. Cook until apples are cooked through - about 3-5 minutes.
- To prepare crepes add about 2 Tablespoons of the apple mixture to a crepe and fold up the crepe burrito style. Place on a plate, fold side down and drizzle caramel sauce over top. You can also top with more apples and powdered sugar.
