Crunchy Cinnamon French Toast (Pain Perdu)

  1. 1. For the French toast, mix dry ingredients (salt, flour, baking powder, and sugar) in a medium bowl.
  2. 2. In a large bowl, mix eggs, vanilla extract, and milk.
  3. 3. Add dry to wet ingredients (batter may be lumpy and that is ok).
  4. 4. In a separate bowl/plate, mix the coating ingredients together.
  5. 5. Get a skillet and heat up a capful of oil/butter on medium-high heat.
  6. 6. Take your Texas toast and dip bread in the batter and then add to the skillet.
  7. 7. Cook on each side for about 2 minutes or until golden brown. Remove and pat slightly with a paper towel to remove excess oil.
  8. 8. Then take the cooked toast and add to the cinnamon/sugar mixture shaking to remove excess sugar.
  9. 9. Serve with your favorite syrup and breakfast side dish.
  10. Note: these can be frozen in a freezer safe bag. To reheat just place in the microwave for about 30 seconds.
