Harvest Salad With Maple Dressing

  1. Heat oil in a large skillet over medium heat. Add potatoes and onions and saute until tender, about 5 minutes. Remove from pan and set aside.
  2. Add kielbasa to pan and saute until browned. Add sweet potatoes and onions back into the pan with a little butter (optional) and saute everything over medium-low heat for another 5 minutes blend the flavors. Add raw apples and the pre-cooked and bacon to the skillet and stir to mix.
  3. Tear the spinach into bite-sized pieces. In a large bowl, toss the spinach with everything from the skillet.
  4. Whisk all ingredients for the dressing and adjust seasonings to your liking (I added a little salt). Serve over each individual salad.
