Mango Margarita

  1. For the mango puree:
  2. In a small food processor or blender, combine the mango, orange juice, sugar, lemon juice, and puree vigorously (20-30 seconds). Pour puree into an airtight container and store in the refrigerator. Shake well before using. NO STRAINING REQUIRED (Hallelujah!).
  3. For the mango margarita:
  4. Combine margarita ingredients in a mixing glass or cocktail shaker and stir or shake well. Fill glass with crushed ice and pour drink over ice.
  5. For the overachievers:
  6. Prior to filling your glass, take two small shallow plates and pour a few ounces of water one plate and cover the bottom of another plate in coarse sugar (sugar in the raw). Lightly moisten the edge of the glass in the water-filled plate and then "rim" the moistened glass edge with the coarse sugar. Pour in your ice and drink and look like a pro! Garnish with a lime round or some skewered mango chunks!
