Homemade Baked Tater Tots
- FOR THE FILLING:
- 4 whole Medium Sized Baked Potatoes, Chilled
- 1 whole Egg
- 2 Tablespoons Salted Butter, Softened
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1/4 cups Grated Onion
- FOR THE COATING:
- 1 whole Egg
- 2 Tablespoons Milk
- 2 cups Crushed Plain Potato Chips
- Preheat oven to 375u0b0F. Lightly spray a baking sheet with nonstick cooking spray and set aside.
- Peel cold baked potatoes and grate into a large bowl. Using a fork, stir in egg, butter, salt, pepper and onion until completely combined. Set aside.
- Prepare coating by whisking egg and milk in one shallow dish and spreading crushed potato chips in another shallow dish.
- To form tater tots, take 1 tablespoon of filling and form into a small cylinder (tater tot shape). Coat in egg and milk mixture and then roll in crushed chips. Place on the baking sheet. Continue this process until all filling has been coated and turned into tater tots.
- Bake for 20-30 minutes, turning halfway through baking. Serve hot.
