Funfetti Waffles (Gluten And Dairy Free)
- 2 Large Eggs, Separated
- 1-1/2 cup Gluten-free Pancake Mix (I Use Pamela's)
- 1 Tablespoon Granulated Sugar
- 1/4 cups Rainbow Sprinkles
- 1/2 teaspoons Vanilla Extract
- 1/4 teaspoons Almond Extract
- 1 Tablespoon Canola Oil
- 3/4 cups Almond Milk
- Maple Syrup, For Topping
- Preheat waffle iron.
- In a medium-sized bowl, whip egg whites until stiff.
- In a separate bowl, whisk together gluten-free pancake mix, sugar, and sprinkles. Add egg yolks, vanilla and almond extract, canola oil, and almond milk to the bowl. Whisk until smooth. Gently fold in egg whites.
- Spray waffle iron with nonstick baking spray. Ladle 1/3 cup batter into center of waffle iron. Cook until golden brown, about 3 minutes.
- Serve with maple syrup.
