Mahshy Bandora (Stuffed Tomatoes)(Lebanese)

  1. Core tomatoes; reserve what is inside.
  2. Fry onions, garlic and pine nuts with 1 tablespoon vegetable oil.
  3. Add over the meat and seasoning.
  4. Stir over medium heat until brown.
  5. Fill tomatoes with meat mixture; arrange in the bottom of a pan.
  6. Add the reserved tomato juice mixed with 2 tablespoons vegetable oil.
  7. Bake in 325u0b0 oven for 15 minutes, until tomatoes are done.
  8. Fry green peppers with 2 teaspoons vegetable oil until tender.
  9. Add over 2 1/2 cups water with pinch of salt.
  10. Let water boil before adding rice. Cover pan and cook at a very low heat for 1/2 hour, until rice is done.
  11. Add mixed vegetables to rice; stir gently.
  12. Cover pan and let it cook for 15 minutes longer.
  13. Serve mixed rice with Mahshy Bandora.
