Sweet Potato Bread
- 1 cup Sugar
- 2/3 cups Orange Juice
- 2/3 cups Canola Oil
- 4 whole Eggs
- 1 cup Applesauce
- 2 whole Cooked, Mashed Sweet Potatoes
- 3-1/3 cups Flour
- 2 teaspoons Baking Soda
- 1-1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1/4 teaspoons Nutmeg
- 1/2 teaspoons Baking Powder
- 1/2 cups Dried Cranberries
- 1 cup Coarsely Chopped Walnuts
- Preheat oven to 350 degrees F.
- Combine sugar, orange juice, oil, eggs, applesauce and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine. Add cranberries and nuts and mix well. Divide between 2 greased loaf pans and bake for 50 minutes or pour into muffin tins as an option. Cool in the pan.
