Blueberry Galette
- 1 whole Pre-made Pie Crust (I Love Trader Joe's)
- 2 cups Fresh Blueberries
- 1/4 cups Organic Sugar
- 2 teaspoons Cornstarch
- 1 pinch Cinnamon
- 1/8 cups Orange Juice
- 2 Tablespoons Fresh Lemon Zest
- 1 whole Egg, Beaten, For Egg Wash (optional)
- Sugar For Sprinkling (optional)
- 1. Preheat oven to 425F and set out your pie crust on a baking sheet to defrost/soften. When it's softened, gently press it flat.
- 2. Gently mix together all of the remaining ingredients (except the optional ones) in a medium bowl.
- 3. Scoop your mixture into the center of your pie crust, leaving a 1 inch border.
- 4.Working in a circle, fold the crust in overlapping pieces over the berries (see photo).
- 5. Brush crust with egg wash and sprinkle with sugar, if desired.
- 6. Bake in the oven for 20-25 minutes until crust begins to brown and blueberries bubble.
- 7. Enjoy!
