Mary Lee’S Cookies
- 1 cup Butter, Softened
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 2 cups All-purpose Flour
- 2 cups Old Fashioned Oats
- 2 cups Rice Krispies, Or Other Crisped Rice Cereal
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 cup Flaked Coconut
- Preheat oven to 450u0b0F.
- Cream the butter and both sugars until light and fluffy. Add the eggs and blend, then add vanilla and mix well.
- In a separate bowl, combine flour, oats, Rice Krispies, baking soda and baking powder. Slowly add to the butter/sugar mixture, mixing until combined well. Fold in coconut.
- Drop dough by teaspoonfuls on a parchment-lined baking pan, about 2 inches apart (cookies will spread while baking). Bake for approximately 8-9 minutes, or until golden brown. Cool on wire rack.
