Eton Mess
- 4 cups Strawberries
- 2 teaspoons Balsamic Vinegar OR Pomegranate Juice
- 3 Tablespoons Castor (superfine) Sugar
- 2-1/2 cups Thickened (whipping) Cream
- 6 whole Meringue Nests
- 1 cup Raspberries (Fresh Or Frozen)
- Hull and quarter the strawberries and place in a bowl with the balsamic and sugar; mix together gently. Set aside.
- In a large mixing bowl, whip the cream until it is thick but still soft. Bash up the meringues into small chunks and dump into the cream. Add raspberries and strawberries (leaving a few aside to garnish if you want to be all posh) and fold together gently.
- Serve immediately (you can make it in advance if you want, but the meringues will go soft).
- I use the store-bought meringues but you can make your own if you want, or if you screwed up a pavlova, use that instead.
