Prune-Nut Bread
- 1 c. dried prunes, chopped
- 2 tsp. grated orange rind
- 1 c. orange juice
- 2 c. all-purpose flour
- 3/4 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 2 eggs, beaten
- 2 Tbsp. vegetable oil
- 1 c. chopped pecans
- Combine first 3 ingredients in a large mixing bowl; stir gently.
- Let stand about 30 minutes.
- Combine dry ingredients. Add eggs and oil to prune mixture; stir well.
- Add dry ingredients; stir until blended.
- Stir in pecans.
- Pour into a greased and floured 9 x 5 x 3-inch loaf pan; bake at 350u0b0 for 55 to 60 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes.
- Remove from pan and cool on a wire rack.
- Yield: 1 loaf.
