Prune-Nut Bread

  1. Combine first 3 ingredients in a large mixing bowl; stir gently.
  2. Let stand about 30 minutes.
  3. Combine dry ingredients. Add eggs and oil to prune mixture; stir well.
  4. Add dry ingredients; stir until blended.
  5. Stir in pecans.
  6. Pour into a greased and floured 9 x 5 x 3-inch loaf pan; bake at 350u0b0 for 55 to 60 minutes or until a wooden pick inserted in center comes out clean.
  7. Cool in pan 10 minutes.
  8. Remove from pan and cool on a wire rack.
  9. Yield: 1 loaf.
