Couscous Salad With Smoked Salmon
- 1/2 cups Couscous, Cooked According To Packet Instructions
- 1/2 cups Vegetable Stock To Cook The Couscous
- 4-1/2 ounces, weight Smoked Salmon, Cut In Cubes
- 1-7/8 ounces, weight Peas Cooked According To Package Instructions
- 1 whole Onion, Chopped
- 1 whole Tomato, Cut In Cubes
- 1 pinch Curry Powder
- 1 Tablespoon Freshly Chopped Parsley
- 2 Tablespoons Virgin Olive Oil
- 2 Tablespoons Lemon Juice
- 1 whole Hard Boiled Egg, Chopped
- Cook the couscous according to the instructions on the packet (using 1/2 cup of vegetable stock for a portion of the water specified on the package).
- Put the cooked couscous into a large serving bowl, then use a fork to break it up and separate the grains.
- From this point, what we re going to do is add all the ingredients, one by one, stirring gently each time we add something new, to combine them all.
- So, we will start with the smoked salmon. Then the peas and onion. Then the tomato and curry powder. Then add the parsley, olive oil and lemon juice. Combine well and decorate with the hard-boiled egg, chopped.
