Lizzies
- 1 (15 oz.) pkg. raisins
- 1/2 c. bourbon
- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1/4 c. butter
- 1/2 c. light brown sugar
- 2 eggs
- 4 c. chopped pecans
- 4 oz. candied citron
- 8 oz. candied cherries, halved
- 2 oz. candied yellow pineapple
- 2 oz. candied green pineapple
- Soak raisins in bourbon overnight. Sift flour, baking soda, cinnamon, nutmeg and cloves. Mix butter, brown sugar and eggs until light and fluffy. Add to flour mixture. Stir in raisins and bourbon. Add pecans and candied fruit; mix well. Coat muffin tins with cooking spray (do not use liners). Fill with mixture. Bake at 325u0b0 for 15 minutes. Makes 5 dozen.
