Lean Green Salad With Olive-Greek Dressing
- FOR THE SALAD:
- 2 cups Chopped Sweet Green Lettuce
- 1 cup Frozen Sweet Peas, Thawed (or Fresh)
- 1 cup Shelled Edamame
- 3 Stalks Celery, Chopped
- 1/2 cups Broccoli Florets, Chopped (about 1 Cup Chopped Broccoli)
- FOR THE DRESSING:
- 1 teaspoon Kalamata Olive Juice
- 10 Kalamata Olives, Chopped Very Fine (using Chopper If Possible)
- 3 Tablespoons Red Wine Vinegar
- 1-1/2 Tablespoon Extra Virgin Olive Oil
- 1 teaspoon Fresh Dill, Chopped
- 1 teaspoon Agave Syrup Or Honey
- 1/2 teaspoons Dried Oregano
- 1/8 Freshly Ground Black Pepper
- Prep all salad ingredients and place in a large bowl. Stir to combine.
- To make dressing, combine all ingredients and stir. Place salad in a bowl and drizzle with dressing. =
