Bourbon And Coke Whoopie Pies

  1. For the Coke buttercream:
  2. Beat together butter, vanilla, and Coke until well combined. Gently mix in powdered sugar and salt. Pour into a piping bag and let chill in the refrigerator for at least one hour (but may be made up to one week in advance).
  3. For the cakes:
  4. Preheat oven to 350u0b0F.
  5. Cream sugar and butter together until light and fluffy.
  6. In a separate bowl sift together flour, cocoa powder, baking powder, baking soda, and salt.
  7. Add remaining wet ingredients to the butter mixture. Gently stir in the dry ingredients a little at a time until well incorporated.
  8. Scoop out 2 tablespoons at a time onto a baking sheet about 1 inch apart. Bake for 12 minutes.
  9. Let cool completely before piping icing in between two cakes.
  10. Store pies in the refrigerator.
