Candied Carrots

  1. Preheat oven to 400 degrees F.
  2. Place carrots into a baking dish and spray them lightly with olive oil spray. Toss to coat.
  3. In a small jar, combine orange juice, honey, paprika, salt and pepper. Screw lid on tightly and shake vigorously to mix.
  4. Pour mixture over carrots and place dish in the preheated oven. Bake on middle rack for 20-30 minutes (depending on the thickness of your carrots) until a fork can pierce them (check frequently to make sure that they do not become overdone).
  5. Remove from oven and garnish with chopped chives.
  6. Nutrition per 1/4 recipe: 99 calories, 0.5 g fat, 1.5 g protein, 19 g carbohydrates, 5 g fiber
