Candied Carrots
- 2 pounds Small (6 Inch) Carrots, Washed And Trimmed To Just Above The Stem
- 1/2 cups Fresh Orange Juice
- 1 Tablespoon Honey
- 1 teaspoon Paprika
- 1/2 teaspoons Sea Salt
- 1 dash Fresh Ground Black Pepper
- 1 Tablespoon Fresh Chives, Chopped
- Olive Oil Spray
- Preheat oven to 400 degrees F.
- Place carrots into a baking dish and spray them lightly with olive oil spray. Toss to coat.
- In a small jar, combine orange juice, honey, paprika, salt and pepper. Screw lid on tightly and shake vigorously to mix.
- Pour mixture over carrots and place dish in the preheated oven. Bake on middle rack for 20-30 minutes (depending on the thickness of your carrots) until a fork can pierce them (check frequently to make sure that they do not become overdone).
- Remove from oven and garnish with chopped chives.
