- 6 whole Corn Tortillas
- Olive Oil Spray
- 12 whole Eggs
- 1/4 cups Milk
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 2 Tablespoons Butter
- 1/2 cups Onion, Chopped
- 2 whole Jalapenos Seeded And Minced
- 1 whole Red Bell Pepper, Stem And Seeds Removed, Diced
- 1 whole Green Bell Pepper, Stem And Seeds Removed, Diced
- 4 ounces, weight Shredded Cheese
- Turn on the broiler in your oven. Spray both sides of the tortillas with olive oil spray. Place tortillas on a baking sheet and broil for 1- 2 minutes per side or until crisp. Remove tortillas from oven and cut into 1" X 1/2" strips.
- In a large bowl, whisk together eggs, milk, salt and pepper. Set aside.
- Melt butter in a large skillet over medium heat. Add onion, jalapenos, and bell peppers; cook until tender. Stir in chopped tortillas. Reduce heat to low.
- Pour egg mixture into skillet, stirring gently. Cook until eggs are set. Top with shredded cheese and serve.
