Blueberry Batter Pudding

  1. Pick over and wash berries.
  2. Put in shallow baking dish. Sprinkle
  3. with
  4. lemon
  5. juice.
  6. Cream
  7. together
  8. butter, 1/2 cup sugar,
  9. egg
  10. and vanilla until well blended.
  11. Mix flour, baking powder and salt.
  12. Stir into mixture.
  13. Spread over berries.
  14. Mix 1/3
  15. cup
  16. sugar,
  17. cornstarch, cinnamon and lemon rind.
  18. Stir in boiling
  19. water.
  20. Pour over blueberry mixture.
  21. Bake at 375u0b0 for 45 minutes
  22. or until golden brown and pick inserted near center comes out clean.
  23. Serve warm, plain or with cream, if used.
