Bean And Bacon Soup
- 1 lb. dried navy beans
- 3 qt. water
- 8 slices bacon or more (ham can also be used)
- 3 c. chopped onions
- 2 c. diced potatoes
- 2 c. diced celery
- 1 c. diced carrots
- 5 1/2 c. tomato juice
- 4 tsp. salt
- 1/2 green pepper
- 1 bay leaf (optional)
- 2 Tbsp. sugar (to taste)
- Combine beans and water in large kettle.
- Bring to boil and boil for 2 minutes.
- Cover and let stand 1 hour, then boil again until tender.
- Fry
- bacon
- until crisp, then cook onions in bacon fat.
- Add
- to
- soup
- with
- bacon drippings.
- Also add tomato juice, then simmer 1 hour.
- Add rest of ingredients and simmer 30 minutes.
- Pressure can
- 1
- 1/2
- hours or cold pack 3 hours.
