Mixed Greens Avocado Blueberry Chicken Salad
- FOR THE VINAIGRETTE:
- 1 Tablespoon White Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Dijon Mustard
- 1/2 teaspoons Dried Oregano
- 1 teaspoon Lemon Juice
- 1 pinch Salt
- 1 pinch Black Pepper
- FOR THE SALAD:
- 4 cups Mixed Greens
- 1-1/2 cup Red Cabbage, Chopped
- 1 Avocado, diced
- 1 cup Blueberries
- 1-1/2 pound Chicken, Cooked And Shredded
- For the vinaigrette:
- In a small Mason jar, add white vinegar, extra virgin olive oil, Dijon mustard, dried oregano, lemon juice, salt and pepper. Close lid and shake until just combined. Set aside until ready to use.
- For the salad:
- In a medium bowl, mix mixed greens, red cabbage, avocado, blueberries and shredded chicken. Top with vinaigrette and enjoy!
