Black Bean Salad
- 1 Tbsp. lemon juice
- 1 tsp. grated lemon peel
- 1 tsp. sherry vinegar
- 1/2 tsp. salt
- 1 clove garlic, chopped
- 1/2 tsp. cumin seed
- 1/2 tsp. coriander seed
- 1/4 tsp. paprika
- 6 Tbsp. olive oil
- 1 Tbsp. mint leaves, chopped
- 1 Tbsp. or more cilantro, chopped
- 1 jalapeno pepper, seeded and chopped
- 1/2 c. red pepper, chopped
- 1/2 c. yellow pepper, chopped
- 1/2 c. green pepper, chopped
- 1 small red onion, chopped
- 1 stalk celery, chopped
- Progresso black beans, quickly heated and drained
- Mix all the ingredients together.
- Refrigerate.
- Good the first day, even better the second.
