Mocha-Sicles
- 1 ounce, weight Semisweet Chocolate, Chopped (you May Use Chips)
- 1/3 cups White Sugar
- 1 Tablespoon Cornstarch
- 1-1/2 Tablespoon Unsweetened Cocoa Powder
- 1-1/4 cup Skim Milk
- 1-1/2 Tablespoon Finely Ground Coffee (consider Decaf If Your Children Will Be Eating These)
- 1/2 teaspoons Pure Vanilla Extract
- 1 teaspoon Butter
- In a double boiler over low-boiling water, melt chocolate, stirring constantly until smooth. Stir in sugar, cornstarch, cocoa, milk and coffee. Continue to stir mixture until thickened, about 8-10 minutes (you may have to increase the heat slightly). When thickened, whisk in vanilla and butter.
- Immediately transfer into a spouted liquid measuring cup, then pour into molds. Freeze overnight.
