Cathy’S Gazpacho
- 1 cup Peeled Tomatoes, Finely Chopped
- 1/2 cups Finely Chopped Bell Pepper (can Use Any Color)
- 1/2 cups Diced Cucumber
- 1/4 cups Minced Onion (red Onion Is Especially Good)
- 2 teaspoons Snipped Parsley
- 1 teaspoon Snipped Chives
- 2 cloves Garlic, Minced
- 3 Tablespoons Red Or White Wine Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Salt
- 1/4 teaspoons Freshly Ground Pepper
- 1/2 teaspoons Worcestershire Sauce
- 3 cups Tomato Juice
- Combine all ingredients in a large bowl. Add more tomato juice if a thinner consistency is desired. Chill until time to serve. Add more salt and pepper to taste. This is great with condiments such as a dollop of sour cream or creme fraiche, sliced green onion, a drizzle of high quality olive oil, or all of the above!
