Ten Can Taco Soup
- 1-1/4 pound Ground Turkey
- 1 whole Small Yellow Onion, Diced
- 1 envelope (1 Oz) Ranch Dressing Mix
- 1 envelope (1 Oz) Taco Seasoning Mix
- 1 can 10 Oz. Rotel Tomatoes And Green Chilis
- 3 cans 15 Oz. Stewed Tomatoes With Green Pepper And Onion
- 2 cans 15 Oz. White Hominy, Drained
- 1 can 15 Oz. Dark Red Kidney Beans
- 2 cans (15 Oz.) Ranch Style Beans
- 1 can (15 Oz.) Black Beans, Drained
- Optional Garnish: Shredded Cheddar Cheese
- In a Dutch oven, begin to brown the ground turkey over medium heat. After a minute or two, add diced onion and toss until the turkey is no longer pink. Drain off the excess fat. Sprinkle the ranch dressing mix over the turkey/onion mixture and toss over low heat to coat. Repeat with the taco seasoning. Stir in remaining ingredients and cover. Simmer for 20 minutes or so, stirring occasionally.
- Sprinkle with a little sharp cheddar and serve with tortilla chips, saltines, corn chips, or (my personal favorite) cornbread.
