Mediterranean Broccoli Salad
- FOR THE SALAD:
- 3 bunches Broccoli, Stems And Flourettes Sliced Thinly
- 1/2 cups Feta Cheese, Cubed Or Crumbled
- 1/2 cups Sun-dried Tomatoes, Thinly Sliced
- 1/2 whole Red Onion
- 1/4 cups Basil, Thinly Sliced
- FOR THE DRESSING:
- 1 whole Lemon, Juice And Zest
- 2 Tablespoons Dijon Mustart
- 2 Tablespoons Red Wine Vinegar
- 1 clove Garlic, Finely Chopped
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/4 teaspoons Oregano
- 1 teaspoon Honey
- 1/4 cups Olive Oil
- Combine salad ingredients in a bowl; set aside.
- Add dressing ingredients to a small jar or glass measuring cup and whisk to combine. Pour dressing over salad, and toss to combine.
- Salad can be made up to 5 days in advance, though broccoli will begin to soften after 2 days.
