Old-Fashioned Peach Cobbler

  1. Preheat oven to 375u0b0.
  2. Lightly grease 8 x 8 x 2-inch baking dish.
  3. Combine brown sugar, cinnamon, lemon rind and juice in large bowl.
  4. Add peaches; toss to mix.
  5. Transfer to prepared baking dish. Combine flours and baking powder on piece of waxed paper.
  6. Beat together margarine and sugar in medium-size bowl until light and fluffy.
  7. Beat in egg white.
  8. Add dry ingredients alternately with milk and vanilla, stirring just to combine.
  9. Drop batter by spoonfuls over peach mixture; spread gently.
  10. Bake in preheated 375u0b0 oven for 25 to 30 minutes or until peaches are tender and top is golden brown.
  11. Serve warm.
