Old-Fashioned Peach Cobbler
- 1/2 c. firmly packed light brown sugar
- 1/2 tsp. ground cinnamon
- 1 tsp. grated lemon rind
- 1 Tbsp. lemon juice
- 4 c. (about 2 1/2 lb.) sliced peeled peaches
- 3/4 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1 Tbsp. baking powder
- 1/4 c. (1/2 stick) reduced calorie margarine, softened
- 1/4 c. granulated sugar
- 2 egg whites, lightly beaten
- 1/2 c. low-fat milk
- 1/2 tsp. vanilla
- Preheat oven to 375u0b0.
- Lightly grease 8 x 8 x 2-inch baking dish.
- Combine brown sugar, cinnamon, lemon rind and juice in large bowl.
- Add peaches; toss to mix.
- Transfer to prepared baking dish. Combine flours and baking powder on piece of waxed paper.
- Beat together margarine and sugar in medium-size bowl until light and fluffy.
- Beat in egg white.
- Add dry ingredients alternately with milk and vanilla, stirring just to combine.
- Drop batter by spoonfuls over peach mixture; spread gently.
- Bake in preheated 375u0b0 oven for 25 to 30 minutes or until peaches are tender and top is golden brown.
- Serve warm.
