Easy Roasted Cheddar-Bacon Potato Salad

  1. 1. Preheat oven to 425F.
  2. 2. Scrub potatoes and dice into bite-size pieces. Put in a bowl and toss with olive oil, salt & pepper. Spread in a single layer on a baking sheet. Bake for 40-45 minutes, tossing halfway through cooking, until browned.
  3. 3. While potatoes are still hot, transfer to a bowl and combine with mayo, cheddar cheese, and bacon bits. Taste and season as needed with salt and pepper.
  4. ** Best if served warm, but also good cold or reheated.
  5. Note: Depending on the potatoes you use, you might need to add more mayonnaise as some tend to "soak it up" more than others.
