Mushroom Rice Pilaf
- 1 stick Butter
- 1 cup Orzo Pasta, Uncooked
- 1 cup Onions, Diced
- 5 cloves Garlic, Chopped
- 4 cups Chicken Broth Or Vegetable Broth
- 1 cup Rice, Uncooked
- 1 package (6 Oz. Package) Crimini Mushrooms, Sliced
- 1 stalk Green Onion For Garnish (optional)
- Salt And Pepper, to taste
- 1. Melt butter in a deep pan or a wok on medium heat. Saute the uncooked pasta in the butter until golden brown. Mix in onion and garlic, and cook for an additional 5 minutes.
- 2. Add broth and rice. Change temperature to high to bring the mixture to a boil. When the mixture is boiling, reduce to medium-low heat and cover. Let simmer until rice is cooked, about 20-30 minutes.
- 3. While rice is cooking, saute the crimini mushrooms and green onions in another pan. Add salt and pepper to taste. When the rice is done, fluff with a fork, then mix the mushroom mixture into the pilaf mixture. Optionally garnish with additional green onions.
