Mini Zucchini Banana Bread
- 1 cup Whole Wheat Pastry Flour
- 1 cup All-purpose Flour
- 1/2 cups Sugar
- 1-1/2 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 1 whole Egg
- 1/2 cups Plain Yogurt
- 1/4 cups Canola Oil
- 3 whole Mashed Ripe Bananas
- 1 cup Shreddede Zucchini
- 1/2 teaspoons Vanilla
- 1/2 cups Mini Chocolate Chips
- Preheat oven to 325u0b0F. Spray three mini loaf pans with cooking spray.
- Whisk together flours, sugar, baking soda, baking powder, salt and cinnamon. In another bowl, combine remaining ingredients, except chocolate chips. Add wet ingredients to dry ingredients and stir until just thoroughly combined. Do not over mix. Stir in the chocolate chips.
- Distribute batter between loaf pans. Bake for 40 minutes, until a toothpick inserted in the center comes out clean.
- Cool on a rack for 10 minutes before removing loaves from pans to cool completely.
