Mini Zucchini Banana Bread

  1. Preheat oven to 325u0b0F. Spray three mini loaf pans with cooking spray.
  2. Whisk together flours, sugar, baking soda, baking powder, salt and cinnamon. In another bowl, combine remaining ingredients, except chocolate chips. Add wet ingredients to dry ingredients and stir until just thoroughly combined. Do not over mix. Stir in the chocolate chips.
  3. Distribute batter between loaf pans. Bake for 40 minutes, until a toothpick inserted in the center comes out clean.
  4. Cool on a rack for 10 minutes before removing loaves from pans to cool completely.
