Mushy Peas With Bacon
- 1 Tablespoon Butter
- 1 Small Shallot, Finely Minced
- 2 cloves Garlic, Finely Minced
- 16 ounces, weight Frozen Sweet Peas
- 1 Tablespoon White Wine Vinegar
- 1/2 cups Heavy Whipping Cream
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 1 teaspoon Freshly Chopped Mint
- 4 slices Cooked Bacon
- Saute butter and minced shallot in a large saute pan over medium-high heat for 3 minutes. Add garlic and cook for 1 minute.
- Add frozen peas and vinegar, cook for 5 minutes. Add cream, salt, and pepper, and cook for another 5 minutes.
- Remove from heat and place in a large mixing bowl with fresh mint. Mash peas with a potato masher or using a large fork. Crumble bacon and fold into pea mixture.
