Blueberry Banana Oat Pancakes
- 1 cup Quick Cooking Oats
- 1-1/4 cup All-purpose Flour (or Whole Wheat)
- 2 Tablespoons Granulated Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Vanilla Extract
- 2 cups 2% Milk
- 2 whole Eggs
- 2 Tablespoons Canola Oil
- 1 cup Blueberries, Washed And Dried
- 2 whole Medium Ripe Bananas, Mashed
- Pulse the oats in a food processor until they resemble sand.
- Combine flour, oats, sugar, baking powder, baking soda and salt, whisk and set aside.
- In a separate bowl, whisk vanilla, milk, eggs and canola oil. Slowly add into the dry ingredients and mix well. .
- Fold in blueberries and mashed banana.
- Preheat an electric griddle or large skillet on the stove. Butter or spray with non-stick cooking spray. Spoon 1/3 cup of the batter onto the griddle or skillet. Flip when the edges begin to dry and bubbles form. Serve with syrup, peanut butter, more fruit, powdered sugar, etc.
