My Favorite Layered Salad
- FOR THE SALAD:
- 1/2 heads Napa Cabbage, Shredded
- 1/2 heads Red Cabbage Shredded
- 1 whole Large Cucumber, Julienned
- 1 bag 10 Ounce Bag Shelled Edamame, Cooked According To Package Instructions
- 2 whole Carrots, Peeled And Grated
- 1 whole Green Onion, Finely Sliced
- 1 whole Small Red Onion, Finely Sliced
- FOR THE DRESSING:
- 1 cup Olive Oil
- 1/2 cups Cilantro, Chopped
- 1/2 cups Honey Or Agave Nector
- 2 cloves Garlic, Minced
- 1 Limes, Juiced
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- For the salad: In a large serving bowl, layer the cabbages, cucumber, edamame, carrots, green and red onions.
- For the dressing: Put the oil, cilantro, honey, garlic, lime juice, salt and pepper in a large blender and blend until smooth.
- Top each serving of salad with 2 tablespoons of the dressing.
