Lime Squares
- 2 cups All-purpose Flour
- 1-1/2 cup Powdered Sugar
- 1 cup Butter
- 2 cups Sugar
- 4 Tablespoons All-purpose Flour
- 4 whole Eggs
- 6 Tablespoons Lime Juice
- 1 teaspoon Lime Zest (optional)
- 1/4 cups Powdered Sugar For Garnish
- 1 whole Lime, Sliced, For Garnish (optional)
- For crust:
- Mix flour and powdered sugar together and cut in butter with forks until butter is in about peasize pieces. Pat into 9"x13" baking pan. Bake at 350 degrees F for 20 minutes.
- For filling:
- Mix sugar and flour together, add eggs, lime juice and zest and beat together until well mixed. Pour over crust and continue to bake for 25-30 minutes. Remove from oven and sprinkle with powdered sugar. Cool completely and cut into squares. Garnish with lime slices if desired.
- * My mother-in-law's recipe says it freezes well; however, mine have never made it into the freezer. We seem to devour them immediately!
