My Mom’S Coffee Cake
- FOR THE CAKE:
- 2 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 3/4 cups White Sugar
- 2 Tablespoons Cold Butter
- 1 cup Milk
- FOR THE TOPPING:
- 2 Tablespoons Melted Butter
- 1/2 teaspoons Ground Cinnamon
- 3 Tablespoons Brown Sugar
- 3/4 cups Reserved Dry Ingredients From Cake Mixture
- For the Cake:
- In a mixer or food processor, combine flour, baking powder, salt, sugar and cold butter. Reserve 3/4 cup of this mixture for the topping. Add 1 cup of milk to the remaining cake mixture and mix until smooth. *You don't want to over mix because then the cake will be tough!*
- Pour the batter into a greased 8x8 baking dish.
- For the Topping:
- Combine the melted butter, cinnamon, brown sugar and the 3/4 cup of reserved cake mixture. Mix well and sprinkle on top of the cake batter.
- Bake for 30-35 minutes at 350 degrees F until slightly golden brown and the toothpick comes out clean. Enjoy!
