Light Fruit Cake
- 2 sticks butter
- 1 c. sugar
- 2 c. plain flour
- 1/2 tsp. baking powder
- 7 eggs
- 1 tsp. vanilla flavoring
- 1 tsp. lemon flavoring
- 1 tsp. almond flavoring
- 1 lb. red and green cherries, chopped
- 1 lb. red and green pineapple, chopped
- 1 box golden raisins
- 1 lb. English walnuts, chopped
- 1 lb. pecans, chopped
- 1 can Baker's coconut
- Sift flour and baking powder.
- Pour flour over chopped fruit and nuts.
- In a mixing bowl, cream together butter, sugar, eggs and flavorings.
- Pour creamed mixture over floured fruit.
- Mix well.
- Bake in a greased and floured tube pan for 1 1/2 hours at 300u0b0.
- Makes large cake.
