New Mexico Style Green Chile Stew

  1. Coat the pork with flour, then brown in oil/fat in a heavy pan. Add the remaining ingredients, bring to a boil, cover, then simmer for about 4 hours or until the meat is very tender.
  2. Notes:
  3. *Other meats can be substituted but pork is the most flavorful.
  4. *The best green chile is fresh or frozen, but canned chile can be used in a pinch. Look for "Hatch" or "Bueno" brands - they're the most flavorful.
  5. *Cayenne can be substituted for red chile powder, but will not be as flavorful.
