Kick-Ass Blueberry Muffins

  1. 1. Preheat oven to 400 degrees F. Grease 24 muffin cups or line with paper liners.
  2. 2. In a large bowl, beat the eggs and oil while slowly adding the white sugar and brown sugar.
  3. 3. Stir in vanilla and lemon juice. In a different bowl, combine the flour, salt, and baking soda. Mix well.
  4. 4. Fold the yogurt and sour cream into the egg mixture.
  5. 5. Add the flour mixture a cup at a time until it is all incorporated. Do not over mix, the batter will be slightly lumpy.
  6. 6. Add the blueberries carefully. Do not crush the berries.
  7. 7. Fill the muffin cups all the way to the top.
  8. 8. In a small bowl, combine the topping ingredients.
  9. 9. Sprinkle the mixture over the tops of the muffins and bake for 20 -25 minutes.
