Kick-Ass Blueberry Muffins
- 4 whole Eggs
- 1 cup Oil (I Use Coconut)
- 1-1/2 cup White Sugar
- 1-1/2 cup Brown Sugar
- 1 teaspoon Vanilla
- 2 Tablespoons Lemon Juice
- 4 cups Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1 cup Blueberry Yogurt
- 1 cup Sour Cream
- 4 cups Fresh Blueberries

- FOR THE TOPPING:
- 1/2 cups Melted Butter
- 1/2 cups Brown Sugar
- 1 teaspoon Lemon Zest
- 1/3 cups Flour
- 1. Preheat oven to 400 degrees F. Grease 24 muffin cups or line with paper liners.
- 2. In a large bowl, beat the eggs and oil while slowly adding the white sugar and brown sugar.
- 3. Stir in vanilla and lemon juice. In a different bowl, combine the flour, salt, and baking soda. Mix well.
- 4. Fold the yogurt and sour cream into the egg mixture.
- 5. Add the flour mixture a cup at a time until it is all incorporated. Do not over mix, the batter will be slightly lumpy.
- 6. Add the blueberries carefully. Do not crush the berries.
- 7. Fill the muffin cups all the way to the top.
- 8. In a small bowl, combine the topping ingredients.
- 9. Sprinkle the mixture over the tops of the muffins and bake for 20 -25 minutes.
