No-Bake Paleo Chocolate Chip Coconut Bars

  1. In a large mixing bowl, combine almond butter, melted coconut oil, maple syrup, vanilla extract, and sea salt. Beat on medium speed with an electric mixer until smooth.
  2. Add shredded coconut, blending until just evenly mixed. Stir in chocolate chips by hand or use electric mixer on lowest speed possible.
  3. Pour into an 8x8 or 9x9 glass pan and chill in the refrigerator for about 2 hours or until coconut has hardened and the mixture has set. Store covered in the refrigerator.
