Chorizo Taco Soup
- 1/2 pounds Chorizo Sausage, Casings Removed
- 1 pound Ground Beef
- 1 whole Red Or Green Pepper, Diced
- 1 whole Large Onion, Diced
- 2 teaspoons Minced Garlic
- 1 Tablespoon Chili Powder
- 1 teaspoon Paprika
- 1 quart Chicken Broth
- 1 can (127ml Size) Chopped Green Chilies
- 2 cans (284ml Size) Tomato Soup
- 2 cans (450ml Size) Black Beans, Drained And Rinsed
- 2 cups Frozen Corn Kernels
- In a Dutch oven over medium heat, crumble and brown the sausage and ground beef until done, about 10 minutes. Add diced pepper, onion, garlic, and seasonings and continue frying 5 minutes. Add remaining ingredients and simmer 20-30 minutes.
- Serve with your choice of toppings, such as shredded cheese, crushed taco chips, chopped cilantro, sour cream.
- For a less spicy soup, substitute 1 pound ground pork for the chorizo sausage.
