Easy Breakfast Casserole

  1. Preheat oven to 325u0b0F.
  2. In a greased 9x13 pan, layer hashbrowns, onion, bacon, and cheese. In a mixing bowl, beat eggs, milk, and seasonings. Pour over casserole.
  3. Cover and bake 60 minutes. Uncover and bake 10-15 minutes longer. Let rest 5 minutes before serving.
  4. Alternative recipe: Make a half recipe in a cast iron skillet. Preheat the skillet and fry the hashbrowns and onion in a little oil. Assemble casserole, cover, and bake 30 minutes. Uncover and bake 5 minutes longer.
